Another great essay! My ex-husband worked with a bunch of older doctors who taught a residency program and healthy eating was a big thing. I would watch what they ate. They were very particular about food, and didn’t take meds — but prescribed the hell out of them. Hmmmm….

What a concept, eating your medicine.

What really opened my eyes was when my ex ruptured his Achilles and needed to lose weight. We were both against taking meds, so he found a homeopathic practitioner and boy were our eyes opened about eating clean. It’s very expensive but it was so worth it. I enjoyed finding new places to buy clean foods and meats. I also cooked more using natural ingredients. I’m a country girl so we made most of our foods from scratch, but like you I loved some process things. The bottom line is our government is responsible for poisoning us. That terrible food pyramid, approving toxic and genetically modified foods, fake meat — I don’t trust our government to ensure I remain healthy. They are the enemy.

I do lots of research too, and I find international sources that can be much more helpful in the certain fresh herbs and spices we should eat to combat inflammation (like longevity spinach). It’s sad how our government puts profits over a healthy population. But once you know better you can do better. If we could eat the way we used to minus the toxic food, the healthcare industry would go out of business.
